IT’S CAKE O’CLOCK! Spring vibes are coming, that’s why I thought it was a perfect time for a lemon-chia cake!
When I first went vegan I was struggling a bit with finding a good cake recipe. I used applesauce as an egg-replacer in the first cake I baked, but didn’t really like the texture of the cake, as it was too crummy in my opinion. Luckily, after some recommendations from fellow vegans, I found the most easy yet delicious cake recipe! So my recipe for this lemon-chia cake is not mine originally, but is based on the cake recipe from the Dutch website Vegan Challenge.
As I’ve mentioned before, applesauce didn’t do the trick for me. In this recipe, soy milk and cornflour play the egg-replacing role. And I must say, it’s such a simple trick, but it works perfectly! This cake turned out so good, the people I served it to couldn’t even tell it didn’t contain any animal derived products 🙂
I chose to go for lemon-chia because I think this is perfect for spring. But of course you can use this basic cake recipe to make any cake you want, and just add other things to make endless variations. For example, you can leave the chia out, you can add poppy seeds, you can add apples instead of lemon, you can add some ginger and/or vanilla to the dough or the icing,… So many options, and I bet they’ll all turn out great! Next time I’m gonna try to make cupcakes with this dough… I can’t wait already!

- What do you need?
For the cake
– 250g plain flour
– 150g sugar
– 20g cornflour
– 1 small bag of baking powder
– 1 teaspoon baking soda
– 100ml sunflower oil
– 200ml unsweetened soy milk
– 1 lemon
– 2 tablespoons chia seedsFor the icing
– 75g powdered sugar
– 1,5 tablespoons soy milk
– 1 tablespoon lemon juice
- How do you make it?
Preheat the oven at 180 degrees Celsius. Put the flour, sugar, cornflour, baking powder, baking soda and chia seeds in a bowl and mix well. Add the zest and juice of the lemon to a measuring cup (you need about 50ml of juice) and add the sunflower oil and soy milk. Mix well and add to the dry ingredients. Mix everything through until you’ve gained a nice dough.Add baking paper to a cake tin and put the dough in the tin. Bake in the oven for about 35 to 45 minutes. Once the cake is ready, let it cool down completely. In the meantime, mix the powdered sugar with the soy milk and lemon juice. Top the cake off with the icing once it has fully cooled down. Finish off with some lemon zest and enjoy to the fullest!
