“Meatballs” in creamy mushroom sauce.

To stay in the festive mood for a little longer, I prepared my love’s favourite meal for dinner tonight. It’s always a party around here when I make vegan meatballs in creamy mushroom sauce. I’m pretty sure there won’t be many leftovers tonight! It’s a perfect dish for those who like simple, Flemish food 🙂 It’s the best with some applesauce on the side and maybe even some cranberry jelly, to linger around in the jolly times of the year for a little bit longer. For me, Christmas can never last long enough!

Because I can’t use the mushroom sauce I normally used anymore, I decided to work with the recipe from the free e-book of Veganistisch Koken, which was written by a Belgian vegan couple. If you sign up to their newsletter, you can get this sauce recipe, and some others, just for free.

  • What do you need? (for 2 people)
    – 500g Potato wedges (precooked, or you can also cook a couple potatoes and cut them into wedges yourself)
    Vegan meatballs
    – 250ml unsweetened soy milk or soy cooking cream
    -250g mushrooms
    – 3 spoons of soy sauce
    – Pepper
    – A jar of applesauce
    – (Optional: some cornflower)
    – (Optional: some cranberry jelly)
  • How to make it?
    We will start with making the mushroom sauce. First you clean the mushrooms with a brush, then slice or cut them into pieces. Heat some vegetable oil in a casserole or saucepan and add the mushrooms when heated. Bake them until they’ve turned rather brown, then add the soy sauce and the milk/cream. Lower the temperature of the stove and let it boil until it becomes a thicker sauce. If you’re using milk, you might have to add some cornflower to gain a thicker sauce texture. Add some pepper, and some more soy sauce to your taste if necessary. When the sauce is ready, we can start baking the meatballs (+/- 5 minutes) and potatoes (+/- 10 minutes). You can give the potatoes more taste by adding some salt and Italian or French herbs, or any other herbs you like. At last, you warm up the applesauce in the microwave. Of course you can also eat it it cold, if you prefer that. Add some cinnamon to it, if you like a more spicy, autumn flavor. Just put everything on a plate and you’re ready to enjoy this classic!
